Something about stuffed sweet potatoes just makes me DROOL.
Baked sweet potatoes are an ideal meal to get every food group in and balance that meal! A balanced meal full or protein, fat and carbs is going to leave you feeling satisfied for a long time as well as nourished to your core! The fun part about stuffed sweet potatoes is that you can make them your own!!! Pick your flavor, stuffing and toppings! All you need is sweet potatoes to make this recipe happen.

I used what I had left in my fridge. you can make these your own by adding anything in them! If you don't have an ingredient I used, sub for what you do! I've used all different kinds of veggies before, corn, beans, rice, quinoa, you name it! You can stuff it!
INGREDIENTS:
2 large sweet potatoes
1 lb Grass Fed beef
1 large overflowing handful of spinach
1 cup chopped broccoli florets
Packet of taco seasoning
Cilantro
Avocado
Salsa
Cheese of choice
DIRECTIONS:
Preheat oven to 400 degrees.
Prepare sweet potatoes by stabbing with fork or knife before cooking and washing.
Then add them to a parchment lined baking sheet to cook for 40 minutes.
Time may vary depending on size of your potatoes. Check at 30 minutes and cook until they're easy to cut down the middle.)
While sweet potatoes are cooking prepare veggies and protein you are putting in.
I cooked ground beef in taco seasoning and sautéed veggies all together in avocado oil.
One the sweet pots were finished I stuffed them full and topped with salsa, cilantro, avocado and a sprinkle of cheese.
