Oatmeal Peach Pie Cookies



These peach cookies take me back to my childhood eating peach pie on an amish farm. They made my house smell like a warm peach candle and they tasted like memories. Perfectly gooey on the inside with a tangy peach flavor in each bite. Sweetened with cinnamon and maple syrup for a subtle sweetness thats low in refined sugar. The flavors pair so well together I had to make a second batch immediately because we devoured the first.


Cookies are something I could NEVER give up. I enjoy making healthier versions of my favorite desserts at home and allowing myself to have them. Since they are made with nourishing ingredients, I feel good about eating them instead of feeling guilty for engulfing in dessert. Like I always say, you can have your cake and eat it too!


These gluten free, peach pie cookies will wow your family and friends and are great for any occasion. Kids will be begging for more. And they're so easy and quick to make, this is the perfect recipe for kids to get creative with you and help out in the kitchen! INGREDIENTS:

1 cup old fashioned oats

3/4 cup gluten free flour (I used bobs red mill)

1 1/2 tsp cinnamon

1 1/2 tsp baking powder

dash of salt

2 tbsp coconut oil, melted and cooled

1 egg

1 tsp vanilla extract

1/2 cup maple syrup

1 cup diced peaches



DIRECTIONS:

Mix together the dry ingredients in a medium sized bowl (oats, flour, spices, baking powder, salt) and set aside.

In a large bowl, mix together the wet ingredients (coconut oil, egg, vanilla, maple syrup).

Once mixed evenly, add the flour mixture into the large bowl and combine all ingredients with a spatula.

Fold in the peaches and chill in refrigerator for 20-25 minutes.

Preheat oven to 325 and line a baking sheet with parchment paper.

Once chilled, scoop cookie dough evenly on baking sheet (making 15 cookies total).

If you have left over peaches, add them to the top of the cookies.

Bake for 12 minutes and allow cookies to cool for 10 before serving.
