The perfect dinner to mix in some flavor to your weeknight meals. This recipe can be used as a meal prep for your week or a quick weeknight dinner with little effort. I'm not one of those bloggers who writes my life story before the recipe so lucky you, this delicious recipe is just a scroll below for you to enjoy!
Tips before you make the recipe:
You can use any kind of chicken you like but I recommend using skin on for optimal flavor!
I used maple syrup because that is what I had available to me but honey works perfectly in place of that, too!
You do not have to marinate over night but it is highly recommended. At least soak chicken in the marinade for an hour to get some of the juices and flavor in there.
INGREDIENTS:
chicken: 4-6 Bone in skin on chicken thighs
1 bag of broccoli or Brussels sprouts, chopped
2 tbsp avocado oil
s&p to taste
marinade:
1/4 cup + 2 tbsp dijon mustard
1 tbsp mustard
1/3 cup maple syrup
1/3 cup coconut oil (or EVOO)
1/3 cup apple cider vinegar
1/2 lemon, juiced
2-4 garlic cloves, minced
s&p to taste DIRECTIONS: *this recipe should be marinated overnight for best results
Add all ingredients for marinade into a blender or bowl and combine.
Once combined, add chicken into a plastic bag or bowl with 1/2 of the marinade and let sit in the fridge overnight. Set the rest of the marinade aside in the fridge overnight.
When ready to cook, preheat the oven to 425.
Transfer the chicken into a baking dish and align the veggie of choice around the chicken evenly.
You can toss the veggies in the marinade before adding to the dish or you can pour the marinade over everything once it is all added to the dish.
Sprinkle with salt and pepper before cooking and then cook for 35-45 minutes depending on the size of your chicken.
For extra crispy skin broil for about 2-3 minutes at the end.
Serve over rice or your choice of side.
Top with fresh parsley and lemon if desired.
