The only Banana Bread recipe you need!
This healthier banana bread is going to be your new favorite. Gluten free, moist and full of flavor. You can even make it vegan by subbing the eggs for 1/2 cup of applesauce!
Banana bread was the most shared recipe in 2020. I guess while everyone was quarantined at home they were craving banana bread! I don't think the trend is going anywhere in the new year so I'm leaving this delicious banana bread recipe for you here to stay.
I love making gluten free banana bread with almond flour for a little nutty taste. Almond flour is my favorite to cook with - find the brand I use HERE.
For this banana bread recipe I added gingerbread chocolate chips to make it a little festive for the holiday season. You can make this gluten free, vegan banana bread without chocolate chips if you'd like! You can also add any nuts or candies that your heart desires to this banana bread and it will still turn out! Sometimes I like to add a scoop or protein or collagen for some extra nourishment.

INGREDIENTS:
2 cups almond flour (@bobsredmill)
1/4 cup tapioca flour
3 small ripe bananas (about one cup)
3 tbsp coconut sugar
2 pasture raised eggs
2 tbsp coconut oil (melted)
1/4 tsp sea salt
1 tsp vanilla
1 tsp baking soda
@lilys_sweets gingerbread chocolate bar. Break into pieces and add half to the batter and the other half on top 🍫 (you can use any chocolate for this recipe or opt out!)
DIRECTIONS:
Preheat oven to 350 and line bread dish with parchment paper or grease with coconut oil.
Add the almond flour, tapioca flour and baking soda to a bowl and mix until combined, make sure the almond flour is fine without chunks.
Add eggs and coconut sugar to another bowl and beat with a hand mixer.
Add banana and beat again until well combined.
Add in the rest of the ingredients and combine everything into one bowl.
Mix until you have a dough then pour batter into bread pan.
Bake for 40-50 minutes or until fork comes out clean.
*To make this recipe vegan, sub 1/2 cup apple sauce for the eggs
