Birthday Cake Cookies (GF)

I am not ashamed to admit I had 5 of these in one sitting. I know youā€™ll want to too

INGREDIENTS:


1/2 cup almond butter ā£ā£ā£ā£

1/4 cup coconut oil (melted but cool or lightly softened)ā£ā£ā£ā£

1/2 cup coconut sugarā£ā£ā£ā£

1/3 cup @bobsredmill coconut flour ā£ā£ā£ā£

1 egg yolk + 1 egg ā£ā£ā£ā£

1 tsp vanilla ā£ā£ā£ā£

1/2 tsp baking sodaā£ā£ā£ā£

Dash of saltā£ā£ā£ā£

1 cup @safeandfair birthday cake granola (use code TARYN10 to save) ā£

DIRECTIONS:


Preheat oven to 350 and line a cookie sheet with parchment paper. ā£ā£ā£ā£

In large bowl mix together coconut oil, nut butter and coconut sugar and vanilla until smooth texture. Add eggs and mix again. ā£ā£ā£ā£

Add remaining ingredients (minus choc chips) and mix until everything is evenly mixed. Add granola and mix again. ā£ā£ā£ā£

I used a cookie scoop to scoop out the cookie dough into balls and place on the parchment lined baking sheet.ā£ā£

Bake for 10 minutes. Allow them to cool before eating. Makes about 12-14 Cookes depending on the scoop size!! ā£
